Some Information About Our USDA and WSDA Services
Heritage Meats is both a USDA and WSDA certified facility. Here is some information about what that means to you the consumer. The information here has been gathered directly from the WSDA Official Small Farm and Direct Marketing Handbook. For more information please visit www.agr.wa.gov
USDA Inspected Meat Sales USDA inspections are required for those outlets selling meat from livestock by the piece through retail outlets. In order to sell to restaurants, farmers markets, and to sell by the cut or across state lines the meat has to have been USDA inspected. The animals also have to have been slaughtered at a USDA inspected facility. The meat that Heritage sells to the various retail outlets in the area all falls under this category.
WSDA Custom Exempt Meat Processing This is a program that licenses persons that slaughter or process uninspected meat animals for the sole consumption of the owner. More simply this program is for those persons who raise their own livestock, for those purchasing livestock directly from producers, and for those who hunt. Animals are slaughtered in a WSDA licensed custom slaughtering facility, then delivered to WSDA licensed custom meat processing facility such as Heritage for aging, cutting and packaging.
